Determinan tingkat cemaran mikrobiologi jajanan pentol yang dijual pedagang kaki lima di sekitar SD Negeri Wilayah Surabaya Pusat

Abstract


Penelitian ini merupakan studi survei observasional yang bertujuan untuk mengidentifikasi dan menganalisis hubungan antara faktor determinan (karakteristik pedagang, higiene sanitasi pedagang, pengolahan dan pengetahuan pedagang) terhadap cemaran mikroba pada jajanan pentol yang dijual pedagang kaki lima di sekitar SD Negeri wilayah Surabaya Pusat. Penelitian dilakukan melalui tiga tahapan yaitu: survei awal, wawancara dan observasi lalu pengambilan sampel dan pengujian laboratorium. Hasil penelitian ini diperoleh dari total 26 sampel pentol yang diuji, ditemukan 7 sampel (26,9%) memiliki Total Plate Count (TPC) yang melebihi ambang batas SNI 3818:2014 yaitu maksimum 1×10⁵ CFU/g. Analisis hubungan menggunakan uji Fisher’s Exact menunjukkan bahwa faktor higiene sanitasi, pengolahan pentol, dan pengetahuan pedagang memiliki hubungan yang nyata terhadap tingkat cemaran mikrobiologi.
